  • 1 cup white beans, pureed
  • 1/2 cup peanut butter or almond butter Use your preferred nut butter
  • 1/3 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 cup chocolate chips

Preparation

  • Preheat the oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper.
  • In a large bowl, combine the pureed white beans, peanut butter, honey, vanilla extract, and salt until smooth.
  • Add in the baking powder and mix well.
  • Fold in the chocolate chips.
  • Pour the batter into the prepared baking dish and spread evenly.

Baking

  • Bake for 25-30 minutes or until the edges are golden and a toothpick comes out clean.
  • Let cool before cutting into squares and serving.

Notes

Store in an airtight container. Can last for about a week at room temperature or up to two weeks in the refrigerator. Consider freezing for longer storage.
