  • 2 medium Fresh pears Use ripe but firm pears like Bosc or Anjou.
  • 4 cups Mixed greens (e.g., arugula, spinach)
  • 1 cup Candied pecans Candy them just before serving to maintain crunch.
  • 1/4 cup Balsamic vinegar Use good quality for best flavor.
  • 1/4 cup Olive oil For dressing.
  • 1 teaspoon Salt To taste.
  • 1/2 teaspoon Pepper To taste.
  • 1/2 cup Crumbled feta cheese Optional; can swap for goat cheese.

Preparation

  • In a large bowl, combine mixed greens and sliced fresh pears.
  • In a skillet, heat a small amount of olive oil and add pecans. Cook until toasted and then add a bit of sugar to candy them.
  • For the dressing, whisk together balsamic vinegar, olive oil, salt, and pepper.
  • Top the salad with the candied pecans and drizzle with the dressing.
  • Optionally, sprinkle crumbled feta cheese on top before serving.

Notes

Store components separately for best life. Keep greens and pears in an airtight container in the fridge up to 2 days. Store candied pecans in a sealed jar at room temperature for up to a week to keep them crunchy.
