  • 2 lbs beef chuck roast
  • 2 large onions, thinly sliced
  • 8 oz mushrooms, sliced
  • 4 cups beef broth Use good quality for best flavor
  • 1 cup red wine Substitute white wine for a lighter flavor
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh thyme or 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 bay leaf
  • French bread (for serving, optional)
  • Swiss cheese (optional, for topping)

Preparation

  • In a large pot or Dutch oven, heat olive oil over medium heat. Add onions and cook until caramelized, about 15 minutes.
  • Add mushrooms and garlic, and sauté for another 5 minutes.
  • Remove the vegetables and set aside.
  • Season the beef roast with salt and pepper and sear it in the same pot until browned on all sides.

Braising

  • Pour in red wine and scrape the bottom to deglaze.
  • Return the onions and mushrooms to the pot, add thyme, bay leaf, and beef broth.
  • Bring to a simmer, cover, and reduce heat to low.
  • Braise for about 2-3 hours until the beef is tender.

Serving

  • Serve hot, optionally topped with Swiss cheese and alongside French bread.

Notes

Cook the onions low and slow for best caramelization. Brown the beef well to enhance the flavor. Allow the braise to rest 10 minutes before slicing. This dish is a high-protein option great for recovery meals.
