Ingredients
  

For the crust

  • 10 pieces Oreo cookies Use gluten-free Oreo cookies for a gluten-free option.
  • 3 tablespoons Vegan butter Melted.

For the filling

  • 1 cup Peanut butter
  • 1 cup Coconut cream Well-chilled for best results.
  • 1/4 cup Maple syrup
  • 1 teaspoon Vanilla extract

For the ganache and topping

  • 6 ounces Chocolate Melted.
  • 6 pieces Mini peanut butter cups For topping.

Instructions
 

Preparation

  • Crush the Oreo cookies and mix with melted vegan butter to form the crust. Press into the bottom of dessert cups.
  • In a bowl, mix peanut butter, coconut cream, maple syrup, and vanilla extract until smooth.
  • Spoon the peanut butter mixture over the crust.
  • Chill the cups in the fridge for about 30 minutes to set.

Ganache and Serving

  • Melt chocolate and pour over the set filling as a ganache.
  • Top each cheesecake with a mini peanut butter cup.
  • Chill again until the ganache is firm, then serve.

Notes

For a firmer texture, ensure your coconut cream is well-chilled before mixing. Try different types of chocolate for the ganache for varied flavors. Adding a pinch of salt to the peanut butter mixture enhances the flavor.
