Ingredients
  

Beef and Seasonings

  • 2.5 pounds beef stew meat, cut into chunks
  • 3 tablespoons olive oil For browning the beef
  • 3 cups beef broth
  • 1 can diced tomatoes, drained
  • 3 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 2 teaspoons salt
  • 1.5 teaspoons black pepper
  • 1.5 teaspoons garlic powder
  • 1.5 teaspoons onion powder
  • 1.5 teaspoons oregano

Vegetables

  • 1 cup chopped bell peppers
  • 1.5 cups mushrooms
  • 3 stalks celery
  • 3 small carrots
  • 1 medium onion
  • 5 cloves garlic

Instructions
 

Preparation

  • Prepare ingredients by chopping beef and vegetables.
  • Brown beef in olive oil until seared.
  • Transfer beef to the slow cooker and add beef broth, drained diced tomatoes, tomato paste, and Worcestershire sauce.
  • Add salt, black pepper, garlic powder, onion powder, and oregano. Stir to combine.
  • Add bell peppers, mushrooms, celery, carrots, onion, and garlic. Stir.

Cooking

  • Cook on low for 7–8 hours or high for 4–5 hours.
  • Stir and serve hot.

Notes

Top with fresh parsley or a spoon of sour cream for extra richness. Brown the beef well for deeper flavor. Cut vegetables to similar sizes for even cooking.
