Ingredients
  

For the Chili Oil

  • 1/2 cup fresh ginger, finely grated Use fresh ginger for the best flavor.
  • 1/2 cup green onions, finely chopped Fresh scallions enhance the aroma.
  • 2 to 4 tablespoons red chili flakes or chili powder Adjust based on desired heat level.
  • 2 teaspoons ground black pepper Optional, can be omitted.
  • 1 teaspoon salt Taste and adjust after cooling.
  • 1 teaspoon sesame seeds For crunch and flavor.
  • 1 teaspoon five-spice powder Can substitute with Sichuan pepper.
  • 1 cup vegetable oil Heat until shimmering but not smoking.

Preparation

  • Add ginger, green onions, chili flakes, black pepper, salt, sesame seeds, and five-spice powder to a heatproof bowl.
  • Heat oil in a saucepan until shimmering.
  • Pour hot oil over the mixture carefully.
  • Stir well to combine evenly.
  • Let cool slightly, taste, and adjust seasoning.
  • Cool completely and store in a jar.

Notes

Store in the fridge for up to 2-3 weeks or in a cool dark place for about 1 week. Always use a clean spoon to avoid contamination.
