  • 1 pound Carrots Peeled and sliced into even pieces
  • 2 tablespoons Garam Masala A warm spice blend
  • 2 tablespoons Olive Oil For roasting
  • 1 tablespoon Maple Syrup Adds sweetness
  • 1/2 teaspoon Salt To taste
  • 1/4 teaspoon Pepper To taste

Preparation

  • Preheat the oven to 400°F (200°C).
  • Peel and slice the carrots into even pieces.
  • In a bowl, mix olive oil, garam masala, maple syrup, salt, and pepper.
  • Toss the carrots in the mixture until well coated.

Cooking

  • Spread the carrots on a baking sheet and roast for 25-30 minutes or until tender, stirring halfway through.
  • Serve warm as a side dish.

Notes

Cool the carrots to room temperature before storing. Keep in an airtight container in the fridge for up to 4 days. Reheat in the oven at 350°F (175°C) for 8-10 minutes to avoid sogginess.
