  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 4 slices bacon, chopped
  • 4 cups chicken broth
  • 2 cups shredded cheddar cheese Use freshly shredded for better melting.
  • 1 cup milk
  • Salt and pepper to taste
  • Green onions for garnish

  • In a large pot, cook the chopped bacon over medium heat until crispy. Remove bacon and set aside, leaving the drippings in the pot.
  • Add the chopped onion to the pot and sauté until translucent.
  • Add the diced potatoes and chicken broth; bring to a boil. Reduce the heat and simmer until potatoes are tender, about 15-20 minutes.
  • Use a potato masher to mash some of the potatoes for a thicker texture, if desired.
  • Stir in the milk and cheddar cheese until melted and combined.
  • Season with salt and pepper.
  • Serve hot, garnished with crispy bacon and green onions.

Notes

If you have leftovers, store them in an airtight container in the refrigerator for 3-4 days. Reheat on the stovetop or in the microwave. Freezing is also an option, but the texture of the potatoes may change after thawing. For variations, add vegetables like carrots or celery, or substitute bacon with turkey bacon or omit it for a vegetarian version.
