  • 1 cup nut butter Ensure it is well mixed before using.
  • 1 cup sweetener (maple syrup or coconut sugar) Experiment with different sweeteners based on your taste.
  • 1 teaspoon vanilla extract
  • 1 cup gluten-free flour (or regular flour) You can use any gluten-free flour blend you prefer.
  • 1/2 teaspoon baking soda
  • a pinch salt salt
  • Chocolate chips or nuts (optional) You can fold in chocolate chips or nuts for added flavor.

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, mix together the nut butter, sweetener, and vanilla extract until smooth.
  • Gradually add in the gluten-free flour, baking soda, and salt, mixing until just combined.
  • If desired, fold in chocolate chips or nuts.
  • Scoop tablespoon-sized amounts of dough onto the prepared baking sheet.
  • Bake for 10-12 minutes, or until the edges are golden.
  • Let cool before serving.

Notes

Serve warm with a glass of milk or hot cocoa. They also make great gifts when packaged in festive boxes or bags. Store cookies in an airtight container at room temperature or in the fridge for longer freshness. Enjoy them for up to a week.
