  • 1 lb fresh crab meat Use fresh crab meat for the best flavor and texture.
  • 1 cup heavy cream
  • 2 large egg yolks
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice Can substitute with a splash of white wine for a deeper taste.
  • to taste Salt and pepper
  • Sugar for caramelizing the top
  • to taste Chives For garnish.

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, combine the crab meat, heavy cream, egg yolks, Dijon mustard, lemon juice, salt, and pepper.
  • Mix gently to combine, being careful not to break up the crab too much.
  • Divide the mixture into individual ramekins.

Cooking

  • Place the ramekins in a baking dish and add hot water to the dish until it reaches halfway up the sides of the ramekins.
  • Bake for 20-25 minutes, or until the mixture is set.
  • Remove from oven, let cool slightly, then refrigerate until chilled.

Serving

  • Before serving, sprinkle a thin layer of sugar on top of each ramekin.
  • Use a kitchen torch to caramelize the sugar until golden brown.
  • Garnish with chives and serve.

Notes

Store leftover Decadent Crab Brulee covered in the fridge for up to 2 days. Keep the caramelized top separate if you can, then torch the sugar right before serving. Do not freeze, as the custard texture will change.
