  • 2 medium Carrots diced
  • 1 tbsp Curry powder
  • 1 can Coconut milk dairy-free
  • 4 cups Vegetable broth vegetarian-friendly

Preparation

  • In a large pot, sauté chopped onion and minced garlic until fragrant.
  • Add diced carrots and cauliflower, cooking for a few minutes.
  • Stir in red lentils and curry powder, followed by vegetable broth.
  • Bring to a boil, then reduce heat and simmer until lentils and vegetables are tender.
  • Stir in coconut milk and season with salt and pepper.
  • Blend for a creamier texture if desired, and serve hot.

Notes

To serve, ladle the soup into bowls and garnish with fresh herbs like cilantro or parsley. Pairs well with crusty bread or a side salad. Store in the refrigerator for up to 4 days or freeze in portions for up to 3 months.
