  • 1 pound Brussels sprouts Fresh and firm sprouts for better crisping
  • 2 tablespoons Olive oil Used for tossing the Brussels sprouts
  • 1 teaspoon Salt To taste
  • 1 teaspoon Pepper To taste

Topping Ingredients

  • 1 cup Blue cheese Can be substituted with goat cheese or feta
  • 4 slices Bacon Cooked until crispy; can be swapped with pancetta or prosciutto

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Trim and halve the Brussels sprouts.
  • Toss the sprouts in olive oil, salt, and pepper.
  • Spread them on a baking sheet in a single layer.

Roasting

  • Roast for about 20–30 minutes or until crispy and golden brown.
  • While the sprouts roast, cook the bacon until crispy and chop into bits.

Finishing Touches

  • Remove the Brussels sprouts from the oven and sprinkle with blue cheese and bacon bits.
  • Return to the oven for another 5 minutes to melt the cheese.

  • Serve warm and enjoy!

Notes

Use fresh Brussels sprouts for better crisping. Don't overcrowd the pan; use two if needed. For a bright touch, add a squeeze of lemon when serving.
