  • 2 medium zucchinis Sliced into fries or sticks
  • 1 cup grated Parmesan cheese For flavor
  • 1 cup breadcrumbs Preferably panko for extra crunch
  • 2 large eggs Beaten for dipping
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper To taste

Preparation

  • Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Slice zucchinis into fries or sticks.
  • In a bowl, mix breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.
  • In another bowl, beat the eggs.

Coating

  • Dip each zucchini fry into the egg mixture, then coat it with the breadcrumb mixture.
  • Arrange the fries on the baking sheet and spray lightly with cooking spray.

Baking

  • Bake for 20-25 minutes, turning halfway through until golden and crispy.

Notes

Crispy Parmesan zucchini fries pair well with marinara sauce, ranch dressing, or spicy aioli. Store leftovers in an airtight container in the fridge for up to three days. Reheat in the oven to maintain crispness.
