Ingredients
  

For the taquitos

  • 8 pieces corn tortillas Warmed to roll easily
  • 1 cup shredded cheese (e.g., cheddar, mozzarella)
  • 1 piece bell pepper, finely chopped
  • 1/2 teaspoon cumin
  • 1/4 teaspoon chili powder
  • to taste Salt and pepper
  • as needed Olive oil spray For spraying before baking

For the avocado lime crema

  • 1 piece avocado
  • 1/4 cup sour cream
  • 2 tablespoons lime juice
  • to taste Salt

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a bowl, mix together the cheese, chopped bell pepper, cumin, chili powder, salt, and pepper.
  • Warm the tortillas in the microwave for about 30 seconds to make them pliable.
  • Spoon about 2 tablespoons of the cheese mixture onto each tortilla, then roll them tightly and place seam-side down on a baking sheet.
  • Spray the taquitos lightly with olive oil.

Baking

  • Bake for 15–20 minutes, or until golden and crispy.

Making the crema

  • For the crema, mash the avocado in a bowl, and mix in sour cream, lime juice, and salt until smooth.

Serving

  • Serve the taquitos hot with the avocado lime crema on the side for dipping.
  • Add lime wedges and chopped cilantro if desired.

Notes

Cool the taquitos completely before storing. Place in an airtight container and keep in the fridge for 2–3 days. Reheat in a 375°F oven for 8–10 minutes to keep them crisp. Do not freeze the avocado crema; make it fresh when serving. Warm tortillas briefly to prevent cracking when rolling. Use a light spray of oil for even browning.
