Ingredients
  

For the fries

  • 5 pieces russet potatoes Washed and dried
  • 2 tablespoons olive oil
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cracked black pepper

For the gravy

  • 5 slices bacon (center cut preferred) Cooked until crispy
  • 3 cloves garlic, minced
  • 1 tablespoon shallot, finely chopped
  • 4 tablespoons butter
  • 1/3 cup all-purpose flour (or gluten-free flour)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 cups chicken stock
  • 2 cups beef stock

For assembly

  • 2 cups cheese curds (cheddar recommended) Added just before serving
  • 1/4 cup chopped chives For garnish

Preparation

  • Preheat the oven to 450°F. Wash and dry the russet potatoes.
  • Cut potatoes into 1/4-inch thick strips lengthwise. Toss with olive oil, paprika, and cracked black pepper.
  • Arrange fries in a single layer on a foil-lined baking sheet. Bake on the middle rack about 20 minutes until crispy and golden.

Gravy

  • While fries bake, cook the bacon in a large saucepan over medium heat until crispy. Remove bacon and chop, leaving drippings in pan.
  • In the pan with drippings, sauté garlic and shallot about 30 seconds. Add butter and melt.
  • Stir in flour to form a roux. Cook about 4 minutes, stirring often.
  • Gradually add chicken and beef stock, salt, and pepper. Bring to a simmer, then reduce heat and cook uncovered 20 minutes, stirring often.

Assembly

  • When fries are done, remove from oven and season with a pinch of salt and pepper.
  • Arrange fries on a serving platter. Sprinkle with cheese curds and chopped bacon. Drizzle hot gravy over the top and garnish with chives.

Notes

Use a large platter so guests can dig in and share. Pair with a green side like crispy roasted Brussels sprouts with blue cheese bacon bites to balance the plate.
