Soup Base

  • 2 cups broth (vegetable or chicken)
  • 1 can (14.5 oz) crushed tomatoes
  • 1 cup heavy cream
  • 1 package (9 oz) cheese ravioli

Aromatics

  • 1 each onion, chopped Use sweet onion for best flavor.
  • 2 cloves garlic, minced Use fresh garlic for best flavor.
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper

Garnish

  • to taste Fresh basil For garnish on top.

Preparation

  • In a large pot, sauté the chopped onion and minced garlic until soft.
  • Add the crushed tomatoes and broth, bringing to a simmer.
  • Stir in the heavy cream and Italian seasoning, seasoning with salt and pepper.
  • Add the ravioli and cook according to the package instructions.
  • Once the ravioli is cooked, garnish with fresh basil before serving.

Notes

Serve the soup hot in deep bowls. Top each bowl with torn basil and a grind of black pepper. Pair it with crusty bread or a simple salad.
