Ingredients
  

For the chicken

  • 4 pieces boneless, skinless chicken breasts Choose medium-sized breasts for easy stuffing.

For the filling

  • 1 cup fresh spinach, chopped Use fresh spinach for the best flavor.
  • 1 cup cream cheese, softened Ensure it is softened for easier blending.
  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic, minced Add more garlic for extra flavor if desired.
  • 1 teaspoon salt Adjust to taste.
  • 0.5 teaspoon black pepper Adjust to taste.

For cooking

  • 1 tablespoon olive oil For searing the stuffed chicken.

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a bowl, mix the cream cheese, spinach, mozzarella cheese, garlic, salt, and pepper.
  • Cut a pocket into each chicken breast and stuff with the cheese and spinach mixture.

Cooking

  • Heat olive oil in a skillet over medium heat and sear each stuffed chicken breast for about 3-4 minutes on each side until golden brown.
  • Transfer to a baking dish and bake for 20-25 minutes, or until the chicken is cooked through.
  • Let rest for a few minutes before serving.

Notes

Serve warm, garnished with extra spinach or herbs. Pairs nicely with roasted vegetables, mashed potatoes, or a simple salad. Store leftovers in an airtight container in the refrigerator for up to 3-4 days, or freeze for longer storage.
