  • 1 pound Italian sausage
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth
  • 1 cup pasta (e.g., fusilli or penne)
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

  • In a large pot, cook the Italian sausage over medium heat until browned. Drain excess fat if necessary.
  • Add the diced onion and minced garlic, cooking until the onion is transparent.
  • Stir in the canned diced tomatoes (with juice), chicken broth, and Italian seasoning. Bring to a boil.
  • Add the pasta and cook according to package instructions until al dente.
  • Reduce heat and stir in the heavy cream. Season with salt and pepper to taste.
  • Serve hot, garnished with fresh basil if desired.

Notes

Use uncooked pasta and cook it directly in the soup for less cleanup. Brown the sausage well for more flavor; drain excess fat. Add cream at the end to avoid curdling; warm slowly. For a lighter version, use half-and-half instead of heavy cream. For extra veggies, stir in spinach or chopped bell pepper near the end.
