  • 2 cups 2 cups cherry tomatoes
  • 2 cloves 2 cloves garlic, minced

Creamy Sauce

  • 1 cup 1 cup heavy cream Can substitute with half-and-half for a lighter version.
  • 1/2 cup 1/2 cup grated Parmesan cheese
  • Salt and pepper Salt and pepper to taste

Garnish

  • Fresh basil for garnish

Instructions
 

Roasting Tomatoes

  • Preheat the oven to 400°F (200°C).
  • Place the cherry tomatoes and minced garlic on a baking sheet, drizzled with olive oil, salt, and pepper.
  • Roast in the oven for 20-25 minutes until the tomatoes are blistered.

Cooking Pasta

  • Cook the rigatoni according to package instructions.
  • Drain and set aside.

Combining Ingredients

  • In a large skillet, combine the roasted tomatoes and garlic with the heavy cream and Parmesan cheese.
  • Stir until well combined and heated through.
  • Add the cooked pasta to the skillet, tossing to coat in the creamy sauce.
  • Season with additional salt and pepper if needed.

Notes
