  • 4 large potatoes, thinly sliced Ensure even slices for consistent cooking.
  • 2 cups mushrooms, sliced
  • 1 cup brie cheese, rind removed and cut into pieces Use ripe brie for best flavor.
  • 2 large onions, thinly sliced Cook slowly for sweetness.
  • 2 tablespoons olive oil
  • 1 cup heavy cream Full-fat cream recommended.
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh thyme or parsley for garnish

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a skillet, heat olive oil over medium heat and add onions. Cook until caramelized, about 15 minutes.
  • In a baking dish, layer half of the potatoes, half of the mushrooms, and half of the caramelized onions. Season with salt and pepper.
  • Add half of the brie cheese pieces on top and repeat the layers with the remaining ingredients.
  • Pour the heavy cream over the top layer.
  • Cover with aluminum foil and bake for 30 minutes.
  • Remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the top is golden brown.
  • Garnish with fresh thyme or parsley before serving.

Notes

Let the bake cool to room temperature before storing. Keep it in an airtight container in the fridge for up to 3 days and reheat in the oven at 350°F (175°C) until warmed through. For a vegan version, use plant cream and soft vegan cheese.
