  • 8 ounces Mushrooms, sliced
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 1 cup Heavy cream Adjust thickness as desired.
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt Adjust to taste.
  • 1/2 teaspoon Pepper Adjust to taste.
  • 1 teaspoon Thyme

Preparation

  • In a large pot, heat olive oil over medium heat.
  • Add the onion and garlic, sautéing until soft.

Cooking

  • Add the cubed ostrich meat, cooking until browned.
  • Stir in the sliced mushrooms and cook until they release their juices.
  • Add thyme, salt, and pepper.
  • Pour in the heavy cream and let it simmer for about 15 minutes until the stew thickens.

Serving

  • Serve hot in bowls, optionally garnished with fresh herbs.
