Ingredients
  

For the Soup Base

  • 16 oz spicy Italian sausage, crumbled and raw
  • 1 cup onion, chopped
  • 5 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon paprika (regular or smoked)
  • 2 tablespoons tomato paste
  • 1/4 teaspoon red pepper flakes
  • 1 cup carrots, diced
  • 5 cups chicken broth or stock
  • 1.5 pounds red or yellow potatoes, cut into 1-inch cubes (avoid russet)
  • 2 cups spinach or kale
  • 1/2 to 1 cup heavy cream (depending on richness)
  • 4 tablespoons fresh thyme or chopped parsley, for garnish
  • Salt and pepper, to taste

Instructions
 

Preparation

  • Brown the sausage with onion and garlic in a large pot for 7–10 minutes. Drain excess fat.
  • Stir in Italian seasoning, paprika, red pepper flakes, and tomato paste until well coated.
  • Pour in chicken broth, scrape the pot, bring to a gentle boil.
  • Add potatoes and carrots and simmer for 20–25 minutes until potatoes are tender.
  • Stir in spinach or kale and let wilt for 2–3 minutes.
  • Add heavy cream and heat through. Taste and add salt, pepper, or extra red pepper flakes.

Notes

Do not use russet potatoes; they break down too much. Add cream at the end to keep it smooth and avoid curdling. Taste and adjust seasoning at the end.
