  • 1 pound Italian sausage Remove from casings
  • 4 medium potatoes, diced Cut into even pieces
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream Use full-fat for best texture
  • 1 cup kale or spinach (optional) Add at the end for extra nutrition
  • Salt and pepper to taste
  • Olive oil For sautéing
  • Parmesan cheese (for serving) Grated

Cooking

  • In a large pot, heat olive oil over medium heat and add chopped onion and garlic. Sauté until onions are translucent.
  • Remove sausage from casings and add to the pot. Cook until browned.
  • Add diced potatoes and chicken broth to the pot. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  • Stir in heavy cream and add kale or spinach if using. Cook for an additional 5 minutes.
  • Season with salt and pepper. Serve hot, topped with grated Parmesan cheese.

Notes

Cool the soup before storing in airtight containers. Refrigerate for up to 3 days or freeze in meal-sized portions for longer storage. Avoid overcooking greens by adding them at the end.
