  • 1 medium Onion, chopped
  • 2 cups Vegetable broth Can substitute with chicken broth
  • 2 cups Spinach or kale Fresh for better flavor
  • 1 can Diced tomatoes
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper

Preparation

  • In a skillet, heat olive oil over medium heat.
  • Add chopped onion and minced garlic; sauté until translucent.
  • Stir in canned white beans, diced tomatoes, and vegetable broth.
  • Add spinach or kale and Italian seasoning.
  • Cook for about 10-15 minutes until heated through.
  • Season with salt and pepper to taste.

Serving

  • Serve warm with pasta or bread.

Notes

Leftovers can be stored in an airtight container in the fridge for up to three days. Reheat gently on the stove or in a microwave. Consider adding a sprinkle of cheese on top when serving.
