  • 4 slices Bacon Cooked until crispy
  • 1 large Onion, chopped Sweet onion preferred
  • 4 cloves Garlic, minced Fresh garlic for best flavor
  • 2 cups Chicken or vegetable broth Use low-sodium if preferred
  • 1 cup Heavy cream For a rich texture
  • Salt and pepper to taste Adjust seasoning as required
  • Chopped parsley for garnish Fresh for color and flavor

Cooking

  • In a large pot, cook the bacon over medium heat until crispy. Remove bacon and drain on paper towels.
  • In the same pot, add the chopped onion and sauté until translucent.
  • Add the minced garlic and cook for another minute.
  • Pour in the broth and bring to a simmer.
  • Stir in the heavy cream, and season with salt and pepper.
  • Crumble the bacon and add it back to the soup.
  • Serve hot, garnished with chopped parsley.

Notes

Store cooled soup in an airtight container in the fridge up to 3 days. Reheat gently on low heat. Freeze only if you skip the cream; add cream when reheating.
