  • 1 pound chicken breast, diced Use boneless, skinless chicken breasts.
  • 1 pound gnocchi
  • 4 cloves garlic, minced
  • 1 cup heavy cream Can substitute with half-and-half or milk for a lighter version.
  • 1 cup chicken broth Use low-sodium broth if preferred.
  • 1 cup spinach Fresh spinach is preferred.
  • 1/2 cup Parmesan cheese, grated Use freshly grated for the best flavor.
  • 2 tablespoons olive oil
  • to taste Salt and pepper
  • Fresh parsley for garnish

Cooking

  • In a large skillet, heat olive oil over medium heat. Add the diced chicken and season with salt and pepper. Cook until golden brown, about 5-7 minutes.
  • Add minced garlic and sauté for 1 minute until fragrant.
  • Pour in the chicken broth and bring to a simmer.
  • Stir in the gnocchi and cook according to package instructions until tender.
  • Reduce heat and add heavy cream and Parmesan cheese, stirring until combined and creamy.
  • Add spinach and cook until wilted.
  • Serve hot, garnished with fresh parsley.

Notes

To store leftovers, place them in an airtight container in the refrigerator for up to three days. Reheat in a saucepan over low heat, adding a splash of chicken broth or cream to loosen up the sauce. Be careful not to overcook the chicken; aim for a golden color. You can add more vegetables like bell peppers or mushrooms for added nutrition. For a touch of heat, try adding red pepper flakes while cooking. This recipe can easily be made vegetarian by replacing the chicken with mushrooms and using vegetable broth instead of chicken broth.
