Ingredients
  

For the chicken

  • 4 pieces chicken breasts Pounded to even thickness for even cooking.
  • 1 can coconut milk Use full-fat for a richer sauce.
  • 1 cup fresh basil leaves Add at the end to keep its fresh flavor.
  • 2 cups rice Cook according to package instructions.
  • 1 piece onion, chopped
  • 2 cloves garlic, minced
  • to taste Salt and pepper
  • 1 tablespoon olive oil For sautéing.

Cooking Rice

  • In a pot, cook the rice according to package instructions.

Cooking Chicken

  • In a large skillet, heat the olive oil over medium heat and sauté the onion and garlic until soft.
  • Add the chicken breasts to the skillet and cook until browned on both sides.
  • Pour in the coconut milk and bring to a simmer.
  • Stir in the fresh basil, salt, and pepper.
  • Cover and let it simmer for about 15-20 minutes, or until the chicken is cooked through.
  • Serve the chicken and sauce over the rice.

Notes

Serve hot over steamed rice. Garnish with extra basil leaves and a squeeze of lime for a bright touch. Add a side salad or simple steamed veggies for color and crunch. Store cooled chicken and rice in airtight containers in the refrigerator for up to 3 days or freeze for up to 2 months.
