  • 2 cups chicken broth Use good-quality chicken broth for best flavor.
  • 1 cup cooked chicken, shredded Rotisserie chicken works great.
  • 4 strips bacon, chopped Save some bacon bits for garnish.
  • 1 cup vegetables (carrots, celery, onions) Sauté until softened.
  • 1 cup pastina pasta Cook according to package instructions.
  • 1 cup heavy cream Add off the heat to prevent splitting.
  • to taste Salt and pepper
  • for garnish Fresh parsley Chopped, for serving.

  • In a large pot, cook the chopped bacon over medium heat until crispy.
  • Add the vegetables and sauté until softened.
  • Pour in the chicken broth and bring to a simmer.
  • Stir in the pastina and cook according to package instructions.
  • Once the pastina is cooked, add the shredded chicken and heavy cream, stirring to combine.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with fresh parsley.

Notes

Cool the soup to room temperature before storing. Refrigerate in an airtight container for up to 3–4 days, or freeze in a freezer-safe container for up to 2 months. Thaw overnight in the fridge before reheating gently on the stove.
