Ingredients
  

For the Filling

  • 10 ounces cooked shredded chicken breast (about 2 cups) Use warm, shredded cooked chicken or rotisserie chicken.
  • 4 ounces cream cheese, softened Let mushroom mix cool before mixing.
  • 1 tablespoon salted butter, softened
  • ½ tablespoon dried chives
  • ½ tablespoon dried minced onion
  • 1 cup mushrooms, finely chopped Button or cremini mushrooms work well.
  • Salt and freshly ground black pepper To taste.

For the Dough Coating

  • 1 can (8 ounces) refrigerated crescent roll dough Can be found at most grocery stores.
  • ¼ cup salted butter, melted
  • ½ cup Italian-style breadcrumbs

For the Gravy

  • 1 can (10 ounces) cream of chicken soup
  • 1 packet (1 ounce) chicken gravy mix
  • ¾ cup water

Preparation

  • Preheat the oven to 350°F (175°C). Lightly grease a baking sheet or line it with parchment paper, then set aside.
  • In a skillet over medium heat, melt 1 tablespoon of butter. Add the chopped mushrooms and sauté for 4–5 minutes until soft and lightly browned. Season with a pinch of salt and pepper, then remove from heat and cool slightly.
  • In a mixing bowl, combine the softened cream cheese and butter until smooth. Add the shredded chicken, sautéed mushrooms, dried chives, and minced onion. Season with salt and black pepper, then stir until even.

Assembly

  • Unroll the crescent dough and separate into triangles. Press two triangles together at the perforation to form a rectangle. Repeat to create 4 rectangles total.
  • Place a generous spoonful of the filling in the center of each rectangle. Fold the four corners over the filling, sealing edges tightly and shaping into a soft pillow.
  • Dip each pillow into melted butter to coat all sides, then roll in breadcrumbs until evenly covered, shaking off excess. Arrange on the baking sheet with space between.
  • Bake for 22–25 minutes until pillows are puffed, golden brown, and crisp outside.

Gravy Preparation and Serving

  • While baking, combine cream of chicken soup, gravy mix, and water in a small saucepan. Place over medium heat and stir until it simmers. Reduce to low and cook about 5 minutes until smooth and thickened.
  • Remove pillows from the oven and cool slightly. Spoon warm gravy generously over each pillow and serve right away.

Notes

Serve these pillows hot from the oven so the dough stays crisp. Pair with sides like mashed potatoes, steamed veggies, or a green salad. For extra creaminess, stir 2 tablespoons of the gravy into the filling before sealing. Sprinkle cheese on top before baking for a golden melted finish.
