  • 1 cup kale, chopped Freshly chopped kale
  • 1 can white beans, drained and rinsed Canned white beans
  • 1 cup artichoke hearts, chopped Canned or jarred, drained
  • 1/2 cup cashews Soaked in water for 2 hours
  • 1/4 cup nutritional yeast Adds cheesy flavor
  • 2 tablespoons lemon juice Freshly squeezed for best flavor
  • 2 cloves garlic Minced
  • 1/2 teaspoon salt Adjust to taste
  • 1/4 teaspoon black pepper Adjust to taste
  • 1/2 cup water For blending

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a blender or food processor, combine soaked cashews, white beans, nutritional yeast, lemon juice, garlic, salt, and pepper. Blend until smooth.
  • In a mixing bowl, combine the blended mixture with chopped kale and artichoke hearts.
  • Spread the mixture into a baking dish.

Baking

  • Bake for 20-25 minutes until heated through and slightly golden on top.

Serving

  • Serve warm with tortilla chips, bread, crackers, or veggies.

Notes

Let leftover dip cool completely before storing in an airtight container. Refrigerate for 3-5 days. Reheat gently in the oven or microwave before serving again. Consider adding spices like paprika for extra flavor.
