  • 1 pound chicken breast, diced Substitute with shrimp or sausage for a different twist.
  • 1 cup uncooked rice Brown rice can be used for a healthier option.
  • 1 tablespoon Cajun seasoning Adjust quantity based on your spice preference.
  • 1 cup chicken broth
  • 1 cup heavy cream Can substitute with half-and-half or dairy-free alternatives.
  • 1 medium bell pepper, chopped
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil For cooking.

  • In a large skillet, heat olive oil over medium heat.
  • Add the diced chicken and Cajun seasoning; cook until browned and cooked through.
  • Remove chicken from the skillet and set aside.
  • In the same skillet, add bell pepper, onion, and garlic; sauté until soft.
  • Stir in rice and toast for a couple of minutes.
  • Add chicken broth and bring to a simmer.
  • Stir in heavy cream and return the chicken to the skillet.
  • Cover and cook on low until the rice is tender, about 15-20 minutes.
  • Season with salt and pepper to taste. Serve warm.

Notes

Best served warm, garnished with fresh parsley or extra Cajun seasoning. Pairs well with steamed vegetables or a fresh salad. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
