Marinade Ingredients

  • 1 pound chicken breast, cut into chunks Use even-sized pieces for even cooking.
  • 1/2 cup melted butter Brush additional melted butter while grilling for extra flavor.
  • 2 tablespoons garlic, minced
  • 2 tablespoons fresh parsley, chopped Fresh herbs enhance flavor.
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon paprika Add smoked paprika for a deeper flavor if desired.
  • to taste Salt and pepper

  • as needed Skewers (wooden or metal) Soak wooden skewers in water for 30 minutes before grilling to prevent burning.

Preparation

  • In a bowl, combine melted butter, garlic, parsley, thyme, paprika, salt, and pepper. Mix well.
  • Add the chicken chunks to the marinade and let it sit for at least 30 minutes.

Grilling

  • Preheat the grill to medium heat.
  • Thread the marinated chicken onto skewers.
  • Grill the skewers for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  • Serve hot and enjoy with your favorite sides.

Notes

Pair with a fresh salad or serve with rice, grilled veggies, or warm rolls. Store cooled skewers in an airtight container in the fridge for up to 3 days or freeze for up to 2 months. Reheat in a low oven or on the grill.
