Ingredients
  

For the mash

  • 4 large potatoes, peeled and diced Use starchy potatoes for a creamier mash.
  • 1/2 cup milk Warm slightly for a smoother mash.
  • 2 tablespoons butter Add more if desired for richness.
  • to taste Salt and pepper Adjust to taste.

For the main dish

  • 2 cups corned beef, cooked and shredded Canned corned beef can also be used.
  • 1 cup green beans, trimmed Can swap for peas or steamed carrots.

Optional seasonings

  • 1 onion, sautéed Adds flavor to corned beef.
  • 1 garlic, sautéed Enhances the overall taste.

Instructions
 

Preparation

  • Boil the peeled and diced potatoes in a large pot until tender, about 15-20 minutes. Drain and return to the pot.
  • Add milk and butter to the potatoes and mash until smooth. Season with salt and pepper.
  • In a separate pan, cook the green beans in boiling water for about 4-5 minutes until tender, then drain.
  • In the same pan, if desired, sauté onions and garlic until translucent. Add the shredded corned beef and cook until heated through.

Serving

  • Serve the mashed potatoes topped with corned beef and green beans on the side.

Notes

Let the dish cool to room temperature before storing. Keep in an airtight container in the fridge for 3-4 days. For extra flavor, add butter or gravy on the mash.
