  • 1 pound corned beef, sliced
  • 1 cup sauerkraut, drained Drain well to avoid soggy bread

  • 1 cup Russian or Thousand Island dressing Alternatives like mayo and ketchup also work
  • 4 large eggs Whisk with milk and seasoning
  • 1 cup milk
  • Salt and pepper, to taste
  • Butter or cooking spray, for greasing

Preparation

  • Preheat the oven to 350°F (175°C). Grease a baking dish with butter or cooking spray.
  • Layer half of the rye bread in the bottom of the baking dish.
  • Top with corned beef, sauerkraut, and Swiss cheese.
  • Spread the dressing evenly over the cheese.
  • Layer the remaining rye bread on top.
  • In a bowl, whisk together eggs, milk, salt, and pepper. Pour this mixture over the entire bake, ensuring it is evenly soaked.
  • Let it sit for about 15-20 minutes to absorb the liquid.

Baking

  • Bake for 30-35 minutes or until the top is golden brown and set.
  • Let it cool for a few minutes before slicing and serving.

Notes
