Ingredients
  

For the Rice

  • 1 cup rice Any type of rice can be used.
  • 2 cups chicken broth Warm broth is preferable.
  • 2 tablespoons olive oil Use extra virgin for flavor.
  • 2 tablespoons garlic, minced Cooking gently prevents burning.
  • 1/2 cup parmesan cheese, grated Use fresh grated for best results.

For the Chicken & Corn

  • 1 lb chicken breast, diced Can be swapped for turkey or shrimp.
  • 1 can corn, drained Frozen corn can also be used.
  • Salt and pepper to taste Salt and pepper Adjust to preference.
  • Fresh parsley for garnish Optional for serving.

Preparation

  • In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  • Add the rice and stir to coat it in the oil, then add chicken broth. Bring to a boil, reduce heat to low and cover. Cook for 18-20 minutes or until rice is tender.

Cooking the Chicken

  • In a separate pan, cook the diced chicken until fully cooked. Season with salt and pepper.
  • Once chicken is cooked, add the drained corn and mix well.

Final Steps

  • Once rice is done, stir in parmesan cheese until melted and creamy.
  • Serve the chicken and corn mixture over the garlic parmesan rice, and garnish with fresh parsley.

Notes

For variation, you can use cooked turkey or shrimp instead of chicken, or add frozen peas and bell peppers for extra nutrition.
