Ingredients
  

Main Ingredients

  • 4 fillets skinless cod fillets (each about 5 ounces and 1 inch thick)
  • 1 tablespoon olive oil
  • 3.5 tablespoons lemon juice
  • 6 tablespoons unsalted butter, cut into pieces
  • 1/3 cup pine nuts
  • 1.5 teaspoons sumac
  • 2 tablespoons finely chopped parsley leaves and tender stems

Seasoning

  • 3/4 teaspoon fine sea salt
  • to taste freshly cracked black pepper

Instructions
 

Preparation

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Pat the cod dry with paper towels and place the fillets on a parchment-lined baking sheet, ensuring space between them.
  • Sprinkle 3/4 teaspoon salt and black pepper over the fish, then drizzle with olive oil and 1 tablespoon of lemon juice.

Cooking the Fish

  • Bake the fish for 10 to 12 minutes, or until the center is opaque and the fish flakes easily with a fork.

Making the Sauce

  • After the fish has been baking for 5 minutes, melt the butter in a small frying pan over medium heat, stirring constantly for about 3 minutes until foaming.
  • Add the pine nuts and a small pinch of salt, cooking for an additional 2 to 3 minutes until the nuts are golden and the butter is brown and nutty in smell.
  • Stir in the sumac, parsley, and remaining lemon juice, then quickly take off the heat.

Serving

  • Serve the cod on plates, pouring the brown butter and pine nut mixture on top. Enjoy right away!

Notes

Best served warm. Pair with a fresh salad or steamed veggies. Consider a glass of white wine.
