Classic Reuben Bake

A warm, cheesy casserole that transforms the classic Reuben sandwich into an easy oven dish.

Ingredients
  

Main ingredients

  • 8 slices rye bread
  • 1 pound corned beef, sliced Use thin-sliced corned beef for even layers.
  • 2 cups sauerkraut, drained Drain well to avoid sogginess.
  • 2 cups Swiss cheese, shredded Gruyère or mozzarella can be used for a milder flavor.
  • 1/2 cup Thousand Island dressing
  • 4 tablespoons butter, melted Brush on top for a golden crust.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a greased baking dish, layer 4 slices of rye bread.
  • Spread half of the Thousand Island dressing over the bread.
  • Layer with corned beef, sauerkraut, and half of the Swiss cheese.
  • Repeat the layers with the remaining rye bread, dressing, corned beef, sauerkraut, and Swiss cheese.
  • Pour melted butter over the top of the sandwich.

Baking

  • Bake in the preheated oven for about 30–35 minutes or until the cheese is melted and bubbly.
  • Allow to cool slightly, then slice and serve.

Notes

Cool leftovers to room temperature and store in an airtight container in the fridge for up to 3 days. Reheat in the oven at 350°F (175°C) until warm, or microwave in short bursts.
