Ingredients
  

Base Ingredients

  • 1 cup cooked rice Warm before assembling
  • 1 package tofu, crumbled Press and drain well before use
  • 1 cup plant-based chorizo Can substitute with real chorizo if preferred

Toppings and Extras

  • 1 can black beans, drained and rinsed Warm before assembling
  • 1/2 cup red lentils, cooked Cook according to package instructions
  • 1 unit avocado, sliced Add just before serving
  • 1/2 cup diced tomatoes Fresh or canned, as preferred
  • 1/4 cup chopped cilantro For garnish
  • 1 unit lime, juiced Add to taste
  • to taste Salt and pepper For seasoning
  • Sour cream or yogurt (optional) For topping
  • Cheese (optional) For topping

Instructions
 

Preparation

  • In a skillet, cook crumbled tofu and chorizo over medium heat until browned. Season with salt and pepper.
  • In a separate pot, cook the red lentils according to package instructions.

Assembly

  • In a bowl, layer rice, the tofu chorizo mixture, black beans, red lentils, diced tomatoes, and avocado.
  • Top with cilantro, a squeeze of lime, and optional toppings. Serve warm.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Keep avocado and fresh toppings separate until you eat to stay fresh. You can serve it with a cold drink or a quick smoothie like a 5-minute matcha green smoothie bowl on the side.
