For the Burger

  • 4 pieces Chorizo sausages Use smoky chorizo for best flavor.
  • 4 pieces Burger buns Slice and toast lightly.
  • 1 cup Chimichurri sauce Make ahead and chill for best taste.
  • 1 cup Lettuce Leafy greens such as romaine or iceberg.
  • 1 cup Tomato slices Fresh, ripe tomatoes are best.
  • 1 medium Onion Can substitute raw onions with pickled if preferred.
  • to taste Salt
  • to taste Pepper

Instructions
 

Cooking the Burger

  • Grill the chorizo sausages until fully cooked.
  • Slice the burger buns and toast them lightly on the grill.
  • Spread chimichurri sauce on the bottom half of each bun.
  • Place the grilled chorizo on the buns.
  • Top with lettuce, tomato slices, and onions.
  • Season with salt and pepper to taste.
  • Close the burger with the top half of the bun and serve.

Notes

Serve hot with fries, salad, or roasted veggies. Store leftover chorizo and toppings separately in airtight containers for up to 3 days.
