Cooking

  • In a large pot, sauté onion and garlic until translucent.
  • Add black beans, corn, vegetable broth, chipotle powder, cumin, and bring to a boil.
  • Reduce heat and let simmer for 20 minutes.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with tortilla strips, avocado, and lime wedges.
