Chickpea Tahini Salad Sandwich

Ingredients
  

Salad Ingredients

  • 1 can chickpeas, drained and rinsed
  • 2 tablespoons tahini
  • 1/4 cup pecans, chopped Can swap for walnuts or sunflower seeds
  • 1/2 cup celery, chopped
  • 1/4 cup onion, finely chopped
  • 1 teaspoon shawarma spice Can substitute with curry powder for variation
  • Salt and pepper to taste Add seasoning gradually
  • Bread or sandwich rolls for serving Best on toasted bread or soft rolls
  • Lettuce or spinach for garnish (optional) Adds crunch and color

Instructions
 

Preparation

  • In a large bowl, mash the chickpeas with a fork or potato masher until mostly smooth.
  • Add tahini, chopped pecans, celery, onion, and shawarma spice to the bowl.
  • Mix well to combine all ingredients.
  • Season with salt and pepper to taste.
  • Serve the chickpea salad on bread or sandwich rolls, garnished with lettuce or spinach if desired.

Notes

Store the chickpea mix in an airtight container in the fridge for up to 3 days. Keep bread separate until ready to serve. Do not freeze the salad as tahini and chopped vegetables change texture after thawing.
