  • 1 lb chicken breast, cut into cubes Use evenly sized pieces for uniform cooking.
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce Can be substituted with teriyaki sauce.
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika Add to taste or experiment with spices.
  • Salt and pepper to taste

Vegetable Ingredients

  • Vegetables (bell peppers, onions, zucchini) Use according to preference.

Equipment

  • Wooden or metal skewers Soak wooden skewers in water for 30 minutes to prevent burning.

Preparation

  • Preheat the grill to medium-high heat.
  • In a bowl, combine olive oil, soy sauce, garlic powder, paprika, salt, and pepper.
  • Add chicken cubes to the marinade and let it sit for at least 30 minutes.
  • Thread the marinated chicken and vegetables onto the skewers.

Cooking

  • Grill the skewers for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.

Serving

  • Serve hot off the grill with simple sides like a light salad or rice.

Notes

Cool the skewers to room temperature before storing. Place in an airtight container and refrigerate for up to 3 days. Reheat gently in the oven or on the grill to keep them moist. For deeper flavor, marinate 2–4 hours in the fridge.
