Ingredients
  

Noodles and Proteins

  • 8 oz lo mein noodles
  • 1 lb chicken breast, sliced Can reuse cooked chicken from other meals.

Vegetables

  • 1 cup bell peppers, sliced
  • 1 cup carrots, julienned
  • 1 cup broccoli florets

Aromatics and Sauces

  • 2 tbsp fresh ginger, minced
  • 3 cloves garlic, minced
  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 2 tbsp vegetable oil For cooking.
  • to taste Salt and pepper
  • Green onions for garnish

Preparation

  • Cook the lo mein noodles according to package instructions, drain and set aside.
  • Prep all vegetables and sauces before you start.

Cooking

  • Heat vegetable oil in a large skillet or wok over medium-high heat.
  • Add minced ginger and garlic, stirring for about 30 seconds until fragrant.
  • Add sliced chicken breast to the skillet, season with salt and pepper, and cook until browned and fully cooked, about 5-7 minutes.
  • Add bell peppers, carrots, and broccoli. Stir-fry for about 3-5 minutes until vegetables are just tender.
  • Add the cooked lo mein noodles, soy sauce, and oyster sauce, tossing to combine everything thoroughly.
  • Stir-fry for another 2-3 minutes to heat through.

Serving

  • Serve the Chicken Lo Mein Stir-Fry hot from the pan, garnished with sliced green onions.
  • Offer extra soy sauce on the side.

Notes

Cool leftovers to room temperature before storing in an airtight container in the fridge for 3-4 days. Reheat in a skillet over medium heat, adding a splash of water if dry. For a side, try a simple potato or roasted vegetable.
