Ingredients
  

For the chicken

  • 2 pieces skinless, boneless chicken breasts Cooked and cubed
  • 3/4 teaspoon salt For seasoning
  • 3/4 teaspoon ground black pepper For seasoning
  • 3/4 teaspoon garlic powder For seasoning
  • 1 tablespoon oil (like olive oil) For cooking the chicken

For the salad

  • 8 ounces dry penne pasta Cooked and cooled
  • 1 1/2 cups croutons For crunch
  • 3 cups romaine lettuce, chopped For freshness
  • 3/4 cup Caesar dressing For flavor
  • 1/3 cup grated parmesan cheese For topping

Instructions
 

Preparation

  • In a bowl, season the chicken breasts with salt, pepper, and garlic powder.
  • Heat the oil in a medium skillet over medium heat. Add the seasoned chicken breasts and cook for 8-10 minutes on each side, until golden brown and cooked through. Once done, remove the chicken from the skillet and set it aside to cool.
  • Once the chicken has cooled, cut it into cubes and set it aside.
  • While the chicken is cooking, prepare the pasta according to the package instructions. Once cooked, drain and let it cool.

Assembly

  • In a large mixing bowl, combine the cubed chicken, cooked pasta, croutons, chopped romaine lettuce, Caesar dressing, and grated parmesan cheese.
  • Toss everything together until well mixed.

Serving

  • Transfer the pasta salad to a serving bowl and enjoy immediately.

Notes

Store leftover Chicken Caesar Pasta Salad in an airtight container in the fridge. It keeps well for 2-3 days, but add croutons just before serving to keep them crunchy. Consider adding extra parmesan or a squeeze of lemon for extra flavor.
