  • 2 slices slices of bread Use your preferred type of bread.
  • 1 cup zucchini, sliced Slice zucchini thin for even cooking.
  • 1 cup fresh spinach Squeeze excess water if wet before using.
  • 1/2 cup Pepper Jack cheese, shredded Can substitute with cheddar or mozzarella.
  • 1 tablespoon butter For spreading on the bread.
  • Salt and pepper to taste Use as desired.

Preparation and Cooking

  • Heat a skillet over medium heat.
  • Spread butter on one side of each slice of bread.
  • On the unbuttered side, layer zucchini, spinach, and Pepper Jack cheese.
  • Season with salt and pepper.
  • Top with the other slice of bread, buttered side up.
  • Grill the sandwich for about 3–4 minutes on each side, or until golden brown and the cheese melts.
  • Serve hot, cut in half for easy eating.

Notes

Pair with light side dishes like salad, soup, or roasted veggies. Store wrapped in foil or in an airtight container for up to 2 days in the fridge.
