  • 2 cups cooked chicken, shredded Use any leftover chicken or rotisserie chicken.
  • 1 cup fresh spinach, chopped Feel free to substitute with frozen spinach if desired.
  • 1 cup cream cheese, softened Greek yogurt or sour cream can be used as alternatives.
  • 1 cup shredded mozzarella cheese Use low-fat mozzarella for a lighter version.
  • 1/2 cup grated Parmesan cheese Freshly grated is recommended for best flavor.
  • 1/2 cup milk Use dairy or non-dairy milk based on your preference.
  • 1 teaspoon garlic powder Can substitute with fresh garlic for a stronger flavor.
  • to taste Salt and pepper Adjust seasoning per personal preference.
  • 1 cup breadcrumbs Optional for topping; panko breadcrumbs can be substituted for crunch.

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a large bowl, combine the shredded chicken, chopped spinach, cream cheese, mozzarella cheese, Parmesan cheese, milk, garlic powder, salt, and pepper. Mix until well combined.
  • Transfer the mixture into a greased baking dish.
  • If desired, sprinkle breadcrumbs on top for added texture.

Baking

  • Bake for 25-30 minutes or until the casserole is bubbly and golden on top.
  • Remove from the oven and let it cool for a few minutes before serving.

Notes

Serve hot out of the oven, paired with a side salad or garlic bread. To store leftovers, cool completely and transfer to an airtight container for up to 4 days in the refrigerator or freeze for longer storage. Reheat thoroughly before serving.
