Ingredients
  

Lobster and Cheese Mix

  • 2 tails lobster tails Use fresh lobster tails for the best taste.
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese Swap for Gruyère or fontina for a different melt.
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon lemon juice
  • 2 tablespoons butter, melted
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Preparation

  • Preheat your smoker to 225°F (107°C).
  • In a mixing bowl, combine cream cheese, cheddar cheese, Parmesan cheese, lemon juice, melted butter, garlic powder, paprika, salt, and pepper. Mix until well blended.
  • Split the lobster tails down the middle and gently pull the meat upward but keep it attached at the end.
  • Spoon the cheese mixture onto the lobster meat.

Cooking

  • Place the lobster tails on the smoker rack and smoke for 30-45 minutes or until the lobster is cooked through and the cheese is bubbly.
  • Remove from the smoker and garnish with fresh herbs if desired before serving.

Notes

Serve hot to keep the cheese melty and the lobster tender. Cool leftovers quickly and store in an airtight container in the fridge. Consume within 2 days for best texture and flavor. Can freeze cooked lobster but texture may change.
