Ingredients
  

For the baked potatoes

  • 2 pieces Potatoes (for baking) Choose potatoes of similar size for even cooking.

For the tuna filling

  • 1 can Tuna Drain well; choose tuna in oil for richer taste or tuna in water for a lighter version.
  • 3 pieces Spring onions Chopped.
  • 3 tablespoons Salad cream Can be swapped with mayonnaise or plain yogurt for a different flavor.
  • 1 cup Cheese Grated cheddar or mozzarella work best.
  • 1 teaspoon Salt
  • 1 teaspoon Pepper

Preparation

  • Preheat the oven to 400°F (200°C).
  • Wash the potatoes and pierce them with a fork.
  • Bake in the oven for 45-60 minutes until tender.

Filling and Baking

  • In a bowl, mix the tuna with salad cream, chopped spring onions, salt, and pepper.
  • Once the potatoes are done, remove them from the oven and carefully cut them open.
  • Stuff the potatoes with the tuna mixture.
  • Top with cheese and return to the oven for an additional 5-10 minutes until the cheese is melted and bubbly.
  • Serve hot and enjoy!

Notes

For best taste, serve hot out of the oven. Add a crisp side salad or steamed vegetables to balance the meal. Store leftovers in an airtight container for up to 2 days.
