  • 3 cloves garlic, minced

  • 2 cups cheddar cheese, shredded Add slowly to avoid clumping.
  • 1 cup milk Whole milk recommended for creaminess.
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Preparation

  • In a large pot, brown the ground beef over medium heat. Drain the fat.
  • Add the diced onion and minced garlic, cooking until the onion is translucent.
  • Add the diced potatoes and beef broth to the pot. Bring to a boil, then reduce heat and simmer until potatoes are tender (about 15-20 minutes).

Finishing

  • Stir in the milk, shredded cheddar cheese, salt, pepper, and parsley. Cook until cheese is melted and soup is heated through.

Notes

For serving, top with extra shredded cheddar, chopped green onion, or a sprinkle of parsley. This soup pairs well with crusty bread or a side like cod, celery and potato stew for a seafood-and-soup spread. Cool the soup to room temperature before storing.
