  • 1 lb ground beef
  • 1 cup shredded cheese (cheddar or Mexican blend) You can use your favorite melting cheese.
  • 4 large flour tortillas Whole wheat tortillas can be used for a healthier version.
  • 1/2 cup chopped onion
  • 1/2 cup bell peppers (chopped)
  • 1 tsp taco seasoning Can be store-bought or homemade.
  • to taste Salt and pepper
  • Cooking oil Use for sautéing and frying.

Preparation

  • In a skillet, heat some oil over medium heat. Add chopped onions and bell peppers; sauté until softened.
  • Add ground beef to the skillet and cook until browned. Drain excess fat, then add taco seasoning, salt, and pepper. Mix well.
  • On half of each tortilla, place a portion of the beef mixture and then sprinkle cheese on top. Fold the tortilla over.

Cooking

  • In the same skillet, add a little more oil if needed and cook the folded quesadillas on both sides until golden brown and the cheese is melted, about 3-4 minutes per side.
  • Cut into wedges and serve hot.

Notes

Serve these quesadillas with salsa, guacamole, or sour cream for added flavor. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet over low heat or microwave, though the latter may lose some crispiness. For a healthier version, use lean ground turkey and add veggies like zucchini or spinach.
